This elk filet mignon (tenderloin) is pure perfection. It can be described as lean, buttery tender and with a mild, almost sweet flavor. It is the crème de la crème and should be enjoyed simply with basic seasonings and your loved ones.
Cooking instructions:
1. Thaw slowly in the refrigerator (ideally overnight)
2. Trim off "silver skin" with a sharp knife
3. Cook hot and fast on an oiled,
smooth surface (i.e. cast iron skillet)
4. Cook to rare or medium rare
(we recommend no higher than
internal temperature of 135 degrees)
5. Season as desired and let rest
